Happy pancake day! Here is one of my tried and true recipes. I make it almost every weekend and serve it with maple syrup and fruit.
Banana Oatmeal Blender Pancakes
Makes: 12-15 pancakes
200g (2 cups) rolled oats (gluten free)
2 medium, ripe bananas
1 tsp cinnamon
¼ tsp nutmeg
½ tsp sea salt, fine
300mL (1 ¼ cups) buttermilk*
1 tsp vanilla extract
2 tsp baking powder
1 large egg
Butter or coconut oil for frying
1. Add the oats, bananas, spices, salt, buttermilk and vanilla extract into a high-speed blender. Blend until smooth. Set aside to rest for 15 minutes. The resting time allows for the rolled oats to soak up the liquid which softens the batter.
2. Preheat the griddle or frying pan on low to medium-low. Melt butter or coconut oil.
3. Add the baking powder to the blender and pulse. Add the egg to the blender and pulse until just incorporated.
4. Measure about a ¼ of batter (or use a soup ladle) and pour onto the hot griddle/pan. Fry each side of the pancake for 3 minutes. The pancake is ready to flip when little bubbles form and burst in the centre.
Serve hot pancakes with maple syrup and butter.
*Make your own buttermilk. Simply add 1 tbsp of white vinegar to the 1 ¼ cups of whole milk. Let stand for 10 minutes before using.
